(One Pan) Cajun Chicken Pasta

We had one of those weekends where the kids begged and begged and begged until I caved... Like seriously guys Im really trying to avoid the carbs, Happy New Year, NEW ME... Pasta again! Fine, but Its for the blog... This is a staple in my house, it came from a favorite blog of mine at one point Im pretty sure maybe 4-5 years ago but I've doctored it up and made it my own as I do with many recipes. I feel like once you know a recipe by heart to the point you don't actually need a physical recipe to make the dish, and you have re-created it adding different ingredients ie: cheese and mushrooms, garlic salt, more cajun seasoning! It transforms to your own RIGHT!
Heres What you Need: Its a lot of ingredients but it is A ONE PAN DISH, which I LOVE! Makes a busy dish like this so much easier!

4-5 Chicken breasts (cut into bite sized pieces)
Cajun seasoning (4 tsps divided)
Butter (4 Tbls divided)
2 Tbls olive oil
2 Tbls minced garlic Fresh or jared the choice is yours
1 yellow or orange pepper
1 green pepper
1 red onion
1 80z diced fresh white mushrooms
2-3 roma or stem tomatoes
1/2 cup white wine (whatever your drinking tonight!)
1 1/2 cup heavy cream
2 cups chicken broth
1 4-5oz wedge parmesan cheese
1-2 lbs fettuccine noodle (ill explain later)
Heres what you do:
Cook fettuccine according to package directions and set aside! (So......Why did I say 1-2 lbs! My kiddos are piggies, and Really every time I make just 1 lb of pasta it is NOT enough, there is enough sauce to cover 2 lbs but really not every family needs to feed an Army!)
Prepare the the pepper and onions by cutting them in to slices set them aside. Dice tomatoes and set aside.

Cut the chicken into to cubes and season with garlic salt, pepper and 2 tsp of cajun seasoning.

Add 2 Tbsp Butter and 1 Tbls olive oil on hight heat in pan Cook chicken 4-5 min on high heat or until cooked through. Remove from Pan, place in Pasta dish you will Serve pasta in or Clean plate.

Add remaining Butter (2 Tbls) and olive oil (1 Tbls) Add garlic and peppers and onion and mushroom to pan. Sprinkle remaining cajun seasoning, some garlic salt and pepper. Cook On highest heat for 2 min. Then add tomatoes. Cook for additional minute. Remove vegetable to pan, Add with chicken to serving pan or plate.

Keep pan on high heat, (Pour your self a glass of WINE!!!) I mean if you want to! Then Pour Wine for dish in to pan, with chicken broth. Cook on high for 5 min Scraping the bottom of the pan to get all of that yummy goodness off. Add Heavy cream and reduce heat to medium cook for additional 5 min or until sauce starts to thicken. While your waiting on that sauce, start grating that block of cheese, were almost to the BEST PART!!!
Take that yummy creamy goodness, and add Half of the cheese to the sauce, wisk it in. Taste it, if you like the amount of spice, You are GOLDEN, Done, FINISHED.
If it isnt spicy enough this is the time to put in a little more cajun or even some cayenne and black pepper.
When the sauce has reached it Max Packed FLAVOR!!! Add to the Noodles, chicken vegetables in your pasta BOWL, top with a little more cheese!!!!, DUh...

TIME TO EAT!!!
